Cake:
2 cups sugar (note: I reduce this to one cup)
2 cups all-purpose flour (note: I substitute wholegrain flour)
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
½ tsp. salt
1 ½ cups vegetable oil (note: I reduce oil to ¾ cup and add ¾ cup applesauce)
4 eggs
1 tsp. vanilla
3 cups grated carrots
½ cup chopped nuts
½ cup raisins (optional)
Combine dry ingredients. Combine eggs, oil, & vanilla and add to dry ingredients.
Add carrots and nuts; blend well. Pour into a greased 9 x 13 pan and bake at 350 degrees for 50 to 60 minutes. Cool.
Cream Cheese Frosting:
4 oz. cream cheese, softened
½ cup butter
3 cups powdered sugar
1 tsp. vanilla
Optional: chopped nuts for topping
Whip together until smooth and spread over cooled cake.
